Habanero Stuffed Potato



Ingredients

  • Medium-sized potato - 4 numbers
  • Butter - 3 tablespoons
  • Sour cream - 2 tablespoons (1/2 fresh cream + 1 lemon, whisked and chilled)
  • Salt - to taste
  • Sprig's Habanero hot sauce - 1 tablespoon
  • Black pepper to garnish

Method

  • Wash the potato.
  • Prick the potato.
  • Place the potato with a little water and cook on high for about 10 minutes or until the potato is soft and cooked.
  • Carefully, using a sharp knife, take the top off the potato.
  • Using a pair of tongs, hold the potato and, using a teaspoon, scoop out the filling. Transfer the filling to a bowl.
  • Set the potato aside.
  • Add butter and salt and microwave for 1 minute.
  • Let it cool and add in the Habanero sauce and sour cream.
  • Fill the potato back up - garnish with coarsely ground pepper and some more chilled sour cream.
  • Serve chilled.
