Pesto Rice Noodles

Pesto Rice Noodles

Cook Time: 10 minutes
Yield: Serves 2 people


  • 1 cup Thai rice stick
  • 200 gm prawns
  • 3 tbsp pesto sauce
  • 1/2 tsp Sprig Bhut Jolokia
  • 1 tbsp extra virgin olive oil
  • salt
  • water


  • Boil the noodles in hot water for 2 minutes or until softened; drain and rinse in cold water for 30 seconds and set it aside
  • Peel and devein prawns; then in a pan heat oil and add the prawns; sprinkle salt and sauté for 2 minutes and take them out
  • In the same pan, add noodles, pesto sauce and Sprig Bhut Jolokia sauce; mix well and cook for a minute at slow flame
  • Add prawns and mix well, adjust salt; cook for another 2 minutes and serves hot
