Shred the Chicken – Boil water in a pan over medium high heat. Add a bay leaf, black peppercorns, salt and stir.
Next, add the chicken.
Cover with a lid. Cook it for 15 minutes or until the chicken is cooked.
Remove the chicken to a plate. Let it cool down little bit.
With the help of a fork shred the chicken.
Making chicken sandwich:
Combine shredded chicken, mayonnaise, garlic, pepper powder, salt, red chili flakes, Sprig Mango Jalapeno sauce and cilantro in a mixing bowl. Taste and add salt or pepper if required. Chicken mayo sandwich filling is ready.
Take a slice of the bread. Spread the chicken mayo filling over it.
To another slice of bread, apply the green chutney (optional).
Cover the sandwich. You can also serve it as a cold sandwich.
