Bean and Quinoa Salad

Serves: 3 persons

Ingredients

  • ½ tsp cumin
  • ½ tsp cinnamon
  • 2 tbsp orange juice
  • 1 ½ tsp red wine vinegar
  • 2 tbsp Molé paste
  • 5 tbsp chilli oil
  • 3 cups cooked quinoa
  • 20 gm chopped cilantro fresh
  • Salt – to taste
  • 2 green onions (thinly sliced)
  • 1 cup black beans (boiled)
  • 7 cherry tomato (halved)
  • Iceburg lettuce

 

Procedure

  1. Combine first cumin, cinnamon, orange juice, red wine, salt, vinegar, Molé paste in a small bowl and slowly add chilli oil, whisking as you pour.
  2. Combine quinoa, tomato, onions, black   beans, and cilantro. Add vinaigrette mix toss to coat. Add lettuce & toss to combine.
