Banoffee Eton Mess

  • Pre-heat your oven to 120 C
  • Line a baking tray with baking paper
  • In a clean bowl, drop the egg whites and beat on high with an electric mixer till soft peaks are formed
  • Add the sugar one spoon at a time
  • Finally add the salt and vanilla and beat till it peaks (the mixture will be glossy and silky by now)
  • In a piping bag with a star nozzle add the egg whites and pipe small buttons
  • Once done, pop into the pre-heated oven and bake for 40 mins
  • After they are done, place a wooden spoon between the door of the oven and let it sit for another 2 hours. This will make sure that the meringues are nice, dry and crisp
  • In another bowl beat the cream on high till it is nice and stiff
  • Time to Assemble: Spoon some Banoffee Spread onto the bottom of your dessert glass, add the meringues, followed by the cream
  • Generously drizzle more of the spread and top with fresh strawberries and nuts
