What is Molé?
Molé is the national dish of Mexico. It is a Mexican hot chilli paste, made with four different kinds of chilies, nuts, cocoa and other Mexican spices. How to use Molé paste?
Brown chicken in a little oil and then cook it in chicken broth when it is almost cooked through, add a few tablespoons of molé paste to get the desired consistency. Garnish with toasted white sesame seeds and viola! Serve with soft fluffy rice and enjoy! It goes equally well with whole-wheat roti, which can be a very good substitute for Mexican tortillas.
There are many other ways to use this molé paste. You could use it to marinate your favourite meat along with some garlic and vegetable oil. Throw it on the grill to give it another dimension of chargrilled smoky flavor. You can also add it to your favourite cookie recipe. Savoury cookies can be an interesting combination with your afternoon tea. For a vegetarian version you can use bell peppers instead of chicken.
