SPRIG Guajillo chilé peppers are produced by drying the highest quality Mirasol chilé from central and northern Mexico. Nicknamed ‘travieso’ (meaning mischievous) for their amazing flavour, Guajillos are also a good source of vitamins, iron, thiamine, niacin, magnesium, riboflavin and are cholesterol-free, saturated fat-free, low calorie, low sodium, and high in fiber.
Usage: Guajillos impart a yellowish colour to foods and are used in sauces, seasonings for colour. Owing to their ‘mischievous’ flavours, Guajillos are used across snacks, sauces and confectionery, pastes, butters or rubs to flavour all kinds of meats, especially chicken. Alternatively, they can be added to salsas, chilé sauces, soups and stews to create a sweet side dish with a surprisingly hot finish.
P.S. A little of this pepper goes a long way, so experiment first to see what level of flavour you prefer.
